How does vegetarian BBQ work?
BBQ means only steak and sausages? In times of the plant-based trend, that's no longer true. Vegetables and the like also taste great on the barbecue! The variety of recipes is endless.
At this year's INTERNORGA, the focus of interest was on two food trends that at first glance seem completely contradictory: BBQ and plant-based dishes. But how does the insatiable desire for barbecue go together with the rapidly growing demand for vegetarian and vegan products? Very well, in fact, because you can also serve your guests great creations at a BBQ without meat.
A colourful variety of vegetables, cheese and fruit
The days when barbecuing was synonymous with juicy steaks and crispy sausages are long gone. Today, a colourful variety of vegetables, cheeses and even fruits come on the grill, making the hearts of vegetarians and vegans beat faster and even die-hard steak fans' mouths water. Because sweet potatoes, aubergines, peppers, courgettes and carrots also get a delicious aroma on the grill, not to mention feta, halloumi or grilled cheese.
The decisive factor here: the marinade. With a mixture of fresh herbs and spices, mustard, honey or lime juice, vegetables and cheese develop a very special flavour - the longer you marinate them, the better.
Especially vegan barbecue recipes with tofu and seitan offer a surprisingly impressive taste experience with the right marinade. Herbs such as rosemary and thyme or garlic give the vegetable alternatives a certain zing, as do the Asian variants with chilli or curry. With the classic corn on the cob, on the other hand, a bath in herb butter is enough to turn it into a real delicacy.
Stuffed mushrooms and parcels
Frequently, grains such as couscous play a role in meat-free recipes - for example, as fillings for mushrooms. Portobello mushrooms or giant mushrooms, among others, are suitable for this. Thanks to their firm consistency, oyster mushrooms can be grilled very well on skewers. Packets are also popular for vegetarian grilling, which - with different contents - are placed either in the embers or on the grill. In fact: even the simplest contents taste delicious when combined on the grill.
