Oh, you lovely asparagus season!

Spring is asparagus time: this popular seasonal vegetable is now fresh and available in many regions. The delicate stalks with their unique flavour are considered a delicacy in many countries such as Germany, France, and the Netherlands.

Lovers of the fine spears are not deterred by sometimes high prices, as asparagus is not only delicious but also healthy and nutritious. It contains many vitamins and minerals such as vitamin C, vitamin K, folic acid, potassium, and iron. In addition, it is low in calories and high in fibre, making it an ideal vegetable for a healthy diet. Asparagus is also frequently included in spring detoxes, as it stimulates the entire metabolism and helps the body eliminate toxins.

In Germany, asparagus is traditionally only harvested until St. John's Day on June 24th. The reason for this is that from then on until the first frost, there are at least 100 days left, which gives the plant enough time to grow into a green bush and regenerate. Then there is nothing standing in the way of next year's asparagus harvest.

Asparagus, by the way, is actually the young shoot of the plant. It can be prepared in various ways -  steaming, frying, grilling, or even eaten raw. Popular asparagus dishes include asparagus soup, asparagus risotto, asparagus omelette, and asparagus salad. In recent years, the trend has been towards simple and healthy asparagus dishes, where asparagus is the star of the meal and prepared with just a few ingredients.

For restaurateurs, the spring asparagus trend is a great opportunity to include seasonal products in their menu and serve their guests a healthy meal. And it is even climate-friendly, according to calculations by the IFEU Institute for Energy and Environmental Research, asparagus has a CO2 emission value of less than 130 grams per 100 grams!
